## [Sweet Potato Vegan Curry with Edamame and Eggplant](https://www.bean-queen.com/blog/sweet-potato-curry-with-edamame-and-eggplant-vegan)

 By [Erin McCarthy](https://www.bean-queen.com/blog/author/erin-mccarthy)

I’m continuing on my bowl streak this week with a beautiful vegan sweet potato curry recipe. I’m loving one bowl meals lately, and curry is a perfect fit. Maybe I just can’t be bothered to spend a lot of time cooking when it’s hot out (who even wants to turn on the oven??), and quick one pot meals like this are perfect.

## [Vegetable Curry with Edamame](https://www.bean-queen.com/blog/vegetable-curry-with-edamame-vegan)

I added some edamame for heft (and also, I’m the Bean Queen and therefore believe everything is improved by beans). Broccoli florets, shredded carrots, and edamame are dressed with a sesame oil and soy dressing, and dried cranberries add little punches of sweet and tart flavor.

## [Thai Peanut Noodles with Edamame & Butternut Squash](https://www.bean-queen.com/blog/edamame-butternut-thai-peanut-noodles)

 By [Erin McCarthy](https://www.bean-queen.com/blog/author/erin-mccarthy)

These sweet and spicy Thai peanut noodles aren't just flavorful, they're also visually impressive with their beautifully vivid orange and green colors. The sauce starts with rich and creamy coconut milk and peanut butter. Vegetable stock keeps the fat under control, and the butternut squash melts into and becomes part of the sauce contributing even more sweetness and creaminess.
